What to expect
A guachinche is a uniquely Canarian institution: a family-run restaurant set up inside a wine-producing house, open only when the new wine of the year is being released. The food is rustic — papas arrugadas with mojo verde, pork ribs, garbanzas, conejo en salmorejo — and the wine is poured straight from the family's own barrel. Guided dinner tours visit two guachinches in the Tacoronte hills, with transfers from southern resorts. The experience is unrepeatable elsewhere in Spain. Book ahead — proper guachinches don't have phone reservations and the spots fill fast.
